Paleo Diet – Paleo Bread Recipe

If you read my post for Paleo Salad, you know that my husband and I are on a new journey. We started the Paleo Diet this week. The biggest part for us is cutting out the carbs. We love our carbs…and sugar! So finding alternatives to bread that fits in the Paleo Diet, is great.

I found this Paleo Bread recipe and it’s actually pretty good. It’s not the best tasting bread in the world but it’s just not the bread we’re used to. I find that having a slice of the Paleo Bread with maybe a slice of Turkey, is satisfying. And I think it will be easier and easier the further we get.

Paleo Bread Recipe

Ingredients

  • 2 cups blanched almond flour
  • 2 tablespoons coconut flour
  • ¼ cup golden flaxmeal
  • ¼ teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • 5 eggs
  • 1 tablespoon coconut oil
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar

Instructions

  1. Place almond flour, coconut flour, flax, salt and baking soda in mixer or food processer
  2. Pulse ingredients together
  3. Pulse in eggs, oil, honey and vinegar
  4. Pour batter into a greased 7.5 x 3.5 loaf pan
  5. Bake at 350° for 30 minutes

My bread did not get as big as a normal loaf but if you use the right size pan, it should get bigger. It tastes the same either way. 🙂
