Mini Pot Pies – Customize for each member of the family

Do you have picky eaters? Or a family where every person likes something different? If this sounds like your family, then here's a great solution. Make Mini Pot Pies customized for each member of the family.

Do you have picky eaters? Or a family where every person likes something different? That’s usually how it is in my family. Only one of my kids will eat pretty much anything. Then there’s one that doesn’t like veggies. Really… nothing green at all. Sometimes he’ll eat a carrot. The other two are hit or miss. Some days they’ll eat whatever I serve and other days they won’t.

If this sounds like your family, then here’s a great solution. Make Mini Pot Pies customized for each member of the family.

Mini Pot Pies

Do you have picky eaters? Or a family where every person likes something different? If this sounds like your family, then here's a great solution. Make Mini Pot Pies customized for each member of the family.

Ingredients

1/2 Cup Bisquick (Bisquick also comes in gluten free)
1/2 Cup of Milk
2 eggs
Optional fillings

Filling ideas:

Cheeseburger – hamburger, cheese, tomatoes, etc

Pizza – pepperoni, sausage, cheese, pizza sauce

BLT – bacon, lettuce, tomato

Pot Pie – chicken, peas, carrots, etc

(all meat added for fillings should be pre-cooked).

Directions

Mix Bisquick, milk and eggs together. Using a muffin tin, put 1 Tablespoon in each cup.

Top with about 1/4 cup of any of your fillings.

Top with one more tablespoon of the Bisquick Mixture.

Bake at 375 for 25-30 minutes.

These are so easy and can really make dinner a lot more fun. Be creative. You can find all sorts of different combinations for these Mini Pot Pies. I would imagine that these would even be good for breakfast creations.

Speaking of breakfast creations. Have you seen my Mini Pancakes using Muffin tins? A similar idea but with pancakes. These are very good and using Muffin Tins takes out some of the extra work. And your family can each customize their meal however they’d like.

We also have Mini Meatloaf using Muffin Tins. So many things you can use your tins for besides muffins!
