Ok, so I made this yummy smoothie last year… and then forgot to post it. It’s been sitting in drafts on the blog since last fall. I just happened to be going through my posts in draft and found it. Seeing as it’s September and the pumpkin recipes are in demand, now is a good time to resurrect this great recipe.
I am a very reluctant fall lover. I really do love the fall season and everything it brings: the cooler weather, the beautiful changing leaves, the pumpkin recipes, apple picking, pumpkin carving, etc. My problem with fall is that it’s the end of summer. Booo! I will do my best to start embracing fall and enjoying everything that it brings.
Starting with this pumpkin smoothie recipe.
Pumpkin Smoothie Recipe
1 Cup Pumpkin Puree
1 Cup milk (I used almond milk)
1 Banana
1 Cup frozen mixed fruit
1/4 tsp ground cinnamon
Add all ingredients to your blender and blend until incorporated.
I used frozen mixed fruit in the recipe vs. freezing the pumpkin puree or using ice cubes. You can make this with ice instead if you prefer. Or you can also freeze the pumpkin puree. Just spoon into a plastic baggie. Freeze overnight. When ready to make your Pumpkin smoothie, take out the frozen puree, let it sit at room temperature for 5-10 minutes and then use. You can change up this recipe a few different ways and it will still be delicious.
No matter how you make it, top with a little whipped cream, a little more cinnamon or even pumpkin pie spice and enjoy!
