Paleo Banana Muffins Recipe

This is a yummy recipe for Paleo Banana Muffins. When I’m having a craving for anything with carbs, this is my go to muffin! It helps curb my cravings without knocking me off of my Paleo Diet.

I did not have very ripe bananas when I made these so next time, I’m going to make sure to use ripe or over ripe bananas. These were good but then were better after the 3rd or 4th day after baking. I’m also going to try adding different spices and maybe even dark chocolate chips. Yummy!

Paleo Banana Muffins

Ingredients

  • 3 eggs
  • ¼ cup coconut oil
  • 2 medium bananas
  • 10 drops stevia
  • ¼ cup coconut flour
  • ¼ teaspoon celtic sea salt
  • ½ teaspoon baking soda

Instructions

  1. Place eggs, oil, bananas, and stevia in a mixer or blender; blend on medium speed until combined
  2. Add in coconut flour, salt and baking soda and blend until smooth
  3. Scoop ¼ cup batter into a lined 12 cup muffin pan
  4. Bake at 350° for 20-25 minutes
