Keto French Toast Muffins – Easy to make and delicious too!

These are amazing for breakfast, of course, but breakfast for dinner is always a huge hit in our house. Heck, you could even eat these as a treat or a snack. Why not?! With cream cheese and eggs as the main ingredients, these French Toast Muffins fit perfectly into the Keto way of eating.

Oh my word! Don’t these Keto French Toast Muffins look amazing? Fluffy goodness with a big ol slab of butter, and drizzled with syrup (sugar free of course). They are so good and EASY to make too. You’ll just need a few ingredients that you’re bound to have on hand if you’re doing the Keto way of eating.

Keto French Toast Muffins

Ingredients

  • 8 Eggs
  • 8 oz Block Cream Cheese
  • 1 tsp Baking Powder
  • 1 1/2 tsp Cinnamon More if desired

Instructions

  1. Blend all ingredients together.
  2. Pour into greased muffin tins.
  3. Bake at 400 degrees for 18-20 minutes.

Recipe Notes

Makes 12 muffins.

I used a blender to easily blend all ingredients together. It also then makes it easier to pour into your greased muffin tins. This is enough to make 12 muffins. 

They come out a nice golden brown color. You will notice that they may fall a little bit in the middle but no worries.

The cinnamon makes them smell and taste amazing. If you love cinnamon, don’t be afraid to add more than the 1 1/2 tsp. You can also experiment with adding sugar substitutes or vanilla even. 

   

They are absolutely delicious with butter and sugar free syrup. 

There are several brands of Keto friendly syrups out there. I used Walden Farms calorie free pancake syrup. It’s not my favorite but it still tastes good. Whatever you choose, just make sure to read the label so you don’t derail yourself out of Ketosis.
