Before being a stay at home mom, I worked in Retail Management. I worked at several different stores in our local mall over the years. 5+ days a week, 40+ hours. Let’s just say that I spent quite a bit of money each week in the food court. I rarely packed my own lunch. I mean, really.. when you can just walk down to the food court and grab whatever you have a craving for, what’s stopping me?!
There used to be a restaurant in the mall called One Potato Two. I loved that place. They made the best BBQ Chicken Baked Potato. So good! I’d eat there as often as I could. Then they went out of business. Boo!
Thankfully, I can easily re-create this recipe at home. It’s super easy. My kids love baked potatoes, however, just eating the potato does not provide them with any protein. I wanted to get in as much protein as I could so I made them each a BBQ Chicken Baked Potato the other day.
Our youngest daughter is not a huge fan of chicken so she was hesitant to try them. She loved it and ate all of the chicken! I guess adding a little BBQ and a lot of cheese might have helped. 😉
Did you know that you can make baked potatoes right in the microwave? It’s super simple. No microwave? No problem.. you can make the baked potatoes in the oven if you prefer. Either way, you just start out with a baked potato. Add toppings, microwave (or heat) for a couple minutes and you’ve got a delicious meal including protein.
BBQ Chicken Baked Potato
Ingredients
Baked Potato
BBQ Sauce
Grilled chicken
Shredded Cheddar Cheese
Sour Cream
Directions
Wash and prepare baked potato.
Steam in microwave oven by either using steamer bags (follow directions on bag for cooking times) or wrap in plastic wrap and microwave until soft. Usually 4-5 minutes for one potato. I used a steamer bag and cooked 3 potatoes in one bag for 7 minutes.
Carefully remove potato, lay on plate and slice.
Add BBQ sauce, grilled chicken and cheddar cheese.
Microwave for an additional 2 minutes or until cheese is melted.
Dollop with sour cream.
These are so good! I think we’ll be having these a few more times and use up our potatoes.
