We’ve been dabbling with the Keto way of eating for awhile now. It’s a great way to shed some pounds but if you’re like me, you can quickly get bored with your options.
It’s important to keep trying new Keto recipes and finding Keto versions of your favorite foods. Take, for example, the Rueben Sandwich. You can easily make a Keto Rueben Unwich casserole version.
I used Buddig Corned Beef, thousand island dressing (check your labels to find the best Keto friendly option), sour krout, and provolone cheese. Yes, swiss cheese usually goes on a Ruben but I had provolone on hand so that’s what I ended up using. In the recipe though, use swiss if you have it.
In a casserole dish, layer your ingredients. I put the corned beef on the bottom, followed by the krout.
Then the thousand island dressing, and the cheese.
Put the casserole dish in the oven at 375 degrees for 10-15 minutes or until cheese is melted and all ingredients are heated through.
Just a note, the sour krout is very watery which can make your casserole more like a soup. Drain as much of the liquid off of the krout as possible before putting the casserole together. I didn’t and it still tasted great but I think the less liquid the better.
This, to me, definitely tasted like a good Rueben Sandwich. And in this case a good Keto Rueben Unwich.
Changing to a Keto way of eating doesn’t necessarily mean that you’ll be missing out on all of your favorites. You can find some great substitutions. And I find that the more you eat keto and the longer you follow the keto lifestyle, your cravings will change. Not saying it will always be easy. Especially in the beginning. But there are still great food options out there.

Keto Rueben Unwich Casserole sounds interesting to try! We have not had corned beef much, but I am sure my husband would be willing to try this.
