Fall is here and with it comes all of the great fall recipes. Time to enjoy butternut squash, roasted pumpkin seeds, pumpkin lattes, pumpkin pie and more. Yum!
I love these warmer fall days where the sun is shining but it’s just a bit cooler. It’s perfect fall weather. Definitely perfect farmer’s market shopping weather.
My son and I like to head out to the farmer’s market on Saturday mornings to take a look at the harvest available. Last Saturday, we picked up a beautiful butternut squash. I have an easy “How to Cook Winter Squash” that you can do in 4 easy steps.
How to Cook Winter Squash
1. First, all you need to do is cut your squash in half.
2. Scoop out the seeds. (If you like to roast seeds, make sure you save these for later. Separate the seeds from the rest and you can roast them).
3. Lay one half of the squash cut side down on a microwavable plate and cook for 8-10 minutes. Cooking times may vary depending on size. Squash is done with the outside is soft to the touch. Be very careful because it will be super hot!
4. Let the squash cool. Scoop out the insides. For even tastier squash, add butter and brown sugar. Mix up, serve and enjoy!
Delicious! After I had brought home this squash, I didn’t have time to make it. Yesterday I just decided to make it before it spoiled. In the middle of the afternoon, I just made the squash with no plans to eat it for dinner. So the kids and I just ate the yummy squash like a snack. 😉 It’s awesome that my kids will eat squash.
Do your kids like squash? If so, buy them up. They are certainly easy to make and good for them. Squash is an outstanding source of antioxidants.
