Mini Pancakes
I just love muffin tins and have found so many great uses for them! I think I may go out and buy several more just so that I have a few extra on hand.
Especially an extra that we use just for crayon making because you don’t want to mix the crayon making muffin tins with the food making muffin tins. Just a side note and an extra tip. Not saying that I may have mixed them up or anything. HA! π
I saw these mini pancakes using muffin tins on a friend’s status. You know me, I’m all about quick and easy solutions for the everyday things that we do. Which includes breakfast!! My kids would eat pancakes everyday if they could…and if I had time to make them.
Making mini pancakes using muffin tins in the oven is super easy! It allowed me to make a variety of mini pancakes, pop ’em in the oven and then give the kids a breakfast that was hot, yummy, and that they could pick up and eat with their hands. Not that eating with their hands is a necessity but when you’re serving kids pancakes, having to cut them all can be a pain!

Mini Pancakes using Muffin Tins
Pre-heat oven to 350.
Use any pancake mix. Mix up the batter.
Spray the muffin tins with non-stick cooking spray.
Fill tins with pancake mix 1/4 – 1/3 full.
Add toppings to each tin ie: cut up sausages, chocolate chips, dab of jelly, dab of syrup, fruit, etc. or leave plain.
Bake in the oven for 10-12 minutes.
Serve.
These are just so perfect. You can customize so that each of your kids or member of the family has pancakes made their way. Love, love, love!

I have not tried that. But I have made regular pancakes and froze before so in theory it should work.

i did just that and we were on a three day adventure.I froze them and then put them in my cooler as were drove .I put them in the hotel fridge the night before and heated in the micro wve . My husband loved them

You could. I’ve done that with full size pancakes and then put them in the toaster to heat up.

I love this idea and I’m trying it right now but I put them in for 12 minutes as directed and they weren’t close to being done. Just wanted to add that cooking times may vary! Wonderful idea and I hope my son loves them!! I used chocolate chips on some and sprinkled cinnamon on a few others

We are currently trying to make these but they are taking far longer than the recipe suggests – would be great to know what is meant by any pancake mix as we are in the UK and may have a different definition!

Literally any pancake mix that you can buy off the shelf. If you have different product in the UK, you might just have to adjust and test to find the right cooking time. I’m sorry I don’t have a better answer for you.

Made these and they needed way more time then stated. Pretty much double the time, or bump the heat up. Otherwise good and easy. I would also make sure if u are adding something like fruit or chocolate chips to add some and push them down and then add more bc I added a few on top and they sunk to the bottom, the top was bare.

It helps if you coat the chocolate chips or whatever in some of the dry mix first. They shouldn’t all sink to the bottom.

If you have a toaster oven, that’d probably be best. Otherwise, microwave. I’ve frozen pancakes before and then put them in the toaster. But these wouldn’t work that way. π

Hi Jessi, there’s really not a recipe. You use whatever pancake batter you’d like and then follow the directions that are located above under the heading “Mini Pancakes using Muffin Tins”

It would be helpful if you gave an idea about how much pancake mix. How many normal pancakes (amount of mix) = how many of these. In looking at my pancake mix, I was not sure if I should try making enough for 5 pancakes? Most muffin tins make a dozen, but how much pancake mix does one need for a dozen?
I only ended up with enough mix for a dozen from making 1.5 of pancake mix ( make est. 8 pancakes). I tried many kinds of combinations most were not impressive, EXCEPT the pizza one I made.
I tried using different flavored extracts, those did not work. I also tried two essential oils: lemon and lime. They did work and tasted good.
I liked the blueberry with lemon essential oil. But alone blueberry was not great. I would say, outside of essential oils or extracts, use a heavy hand because the one I put maple syrup on and the one I tried cinnamon/ginger/all spice/clove had hardly any flavor at all.
For fun I used food coloring, mini m&ms, chocolate chips, sprinkles. The kids thought they were fun, but the ones that really were my and my husband’s favorites were the pizza ones. I didn’t have any bacon or sausage, but I had pepperonis. I cut them up tiny, put some Italian seasoning, garlic salt (may make it too salty for some) and right at the end I left only the pizza ones in the pan, added mozzarella and turned the oven off so they could finish melting. Added some siracha on the top and they were amazing.
My pancake mix said cook on 375, and in seeing everyone else stating 12 minutes was not long enough, I cooked mine at 375. And honestly 12 minutes was pushing it. The tops were dry, not hard, just not moist looking.
Also, I used the muffin paper cups to try to keep from a mess, BUT couldn’t successfully get the “pancakes” out of them without losing half of the “cake”.
Next time I will only use essential oils for flavoring, make more pizza ones, and try even more fruits and zests. I think they need a strong “flavor” to really stand out. Most of mine didn’t even taste great for pancake, which, The mix is usually good all by itself. I think the fact I’m not frying it (which also flavors it) is why it just tasted so bland. I will definitely add oil to pan and not use the muffin cups in hopes I get a better finish.
