Coconut Flour Paleo Pancakes

Since going Paleo, I’ve been missing my breads. It hasn’t been terrible to cut out carbs but having things that you can replace with a Paleo version is awesome. Like this recipe for Paleo Pancakes. They are yummy!!

I sometimes will make a regular meal for my kids and a Paleo meal for me and my husband. For dinner though, it’s usually Paleo for the whole family. I made these Coconut Flour Paleo Pancakes for dinner one night and everyone loved them. The kids didn’t notice a difference from “normal” pancakes.

The kids had regular syrup on theirs, my husband and I used honey. I also added blueberries to mine. So good!! If you’d like to use syrup, then look for real maple syrup or sugar free.

Coconut Flour Paleo Pancakes

Ingredients

  • 4 eggs room temperature
  • 1 cup coconut milk
  • 2 tsp vanilla extract
  • 1 tbsp honey
  • 1/2 cup coconut flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • Coconut oil to grease griddle

Instructions

  1. Preheat frying pan or griddle over medium-low heat. Add a little coconut oil to grease griddle.
  2. In a bowl, mix eggs together well.
  3. Mix in coconut milk, vanilla, and honey.
  4. In a second bowl combine dry ingredients by whisking together the coconut flour, baking soda, and sea salt thoroughly. Mix wet and dry ingredients together well.
  5. Add coconut oil or cooking fat of your choice to griddle or pan. Pour or ladle enough batter to form a small pancake. Cook until edges start to dry and firm then flip and cook through.
  6. Top with real maple syrup, honey, or fruit of your choice.

    Made these for breakfast this AM. DH says they are the best, most like he remembers. They were great! DH had just cooked bacon, so cooked in bacon grease. I boil up a couple cups frozen blueberries with a little maple syrup for the topping. We have eaten paleo over a year and clean before that.

      Yes, I’m sure that’d be fine. It’s just a taste preference I think.
