Keto Cheesecake Muffins


  • 2 - 8 oz packages of full fat cream cheese softened
  • 1/2 cup granulated sugar substitute ie Munk Fruit or Swerve
  • 2 eggs
  • 1 cup chopped pecans
  • 1 tsp vanilla extract
  • Optional add ins: 1/4 cup sugar free chocolate chips


  1. Preheat oven to 350 degrees
  2. Line 12 muffin tins with muffin liners
  3. Using mixer, beat softened cream cheese until smooth and creamy
  4. Add eggs, sugar substitute, vanilla and any optional add ins; mix to combine
  5. Evenly add chopped pecans to the bottom of each muffin tin liner
  6. Evenly fill muffin tins with cheesecake filling
  7. Bake for 18-20 minutes
  8. Allow to cool in refridgerator
  9. Service cold with whipped cream on top
